WINEMAKING STATEMENT

The Mediterranean terroir is the conjunction of three elements: soil, climate and the way humans have been working the land. Mediterranean vines struggle because of a lack ground water availability during the growing season. These climatic conditions together with the soil texture define the terroir and in consequence the wine profile. In addition, controlling the ripening of the grapes throughout the season enables us to ensure exceptional evolution of the aromas to create surprising, expressive wines.

The Priorat is a privileged place for the vines to synthesize high-end tannins and complex aromas. The grapevines ripen under highly demanding conditions to produce succulent grapes to feed the natural predators in the wild environment of this magnificent landscape.

At Perinet we grow vines in four differentiated vineyard locations where each one has a particular personality in terms of the mesoclimate of each plot. Grapes grow under the influence of the sea breeze in Pendents near Porrera, the prevailing hot, dry winds from the Ebro river valley in Torroja del Priorat and in the higher hillsides and more continental conditions of Mas Vell and Mas del Xes in Poboleda, where altitude expresses its best. Thus, identifying the most important factors that express the terroir in the physiology of the vines is the main way for us to achieve the balance and the maximum expression of the resulting wines.

By better understanding how Garnatxa and Carinyena perform, looking at their nutritional needs and how they can survive under the demanding water conditions in the Priorat we get to understand the kind of aromas that they produce. The aroma is produced in two stages, the first in the three weeks after veraison with a much crisper style but still plenty of aacidity and fruitiness, and the second a month later, when the vines start producing a riper, more diverse palate. This wide spectrum of aromas, plus the influence of the terroir, the climate of each vintage and the winemaker’s preferences, brings together the tools for us to know and understand the demanding market of premium wines. Almost an artisan job, but grounded in the complexity and rigour of a scientific methodology. Integrating with respect our performance in the landscape and a natural environment where the uniqueness is expressed into the wines.  

Sense of place. What defines Perinet is its soil texture, climate conditions, sub-zones, mesoclimates and the unique sense of place. The vineyard plot where we grow the vines, particularly holding a medium to low pH level due to the Llicorella metamorphic rock, combined with the influence of the sea breeze boosts the minerality of the wines, giving rise to an amusing balance of acidity and lightness. Working naturally with no added sulfites and respecting the environment through organic farming, it becomes something very different compared to other regions of the world; just here, this amalgam becomes a sensation. A fine balance between the warm, tannin-filled ripeness that comes from a Mediterranean area and the crispness, lingering taste and acidity of the hills of the Priorat.
